Roaster Note:
This is our first purchase from BUF COFFEE's Umurage Washing Station in two years.
We previously introduced Funky Natural, a process that involves a long fermentation with pulp, but this one is a classic natural process.
After harvest, the fermentation proceeds naturally through sun-drying on their African bed, so the flavors of the variety and the terroir are combined with the flavors derived from the fermentation process.
The Bourbon varieties grown in Rwanda are characterized above all by their sweetness, which in the washed process offers notes such as red apples and flower nectar.
Compared to that, the natural process adds just the right amount of flavor, giving this lot the impression of green apples, nectarines, and cocoa fruit.
In order to take advantage of these flavor characteristics, roasting is relatively advanced to achieve a fruit chocolate-like balance.
